This delicious and easy crispy peanut slice can be made with either caramel or chocolate icing on top!
If you have a sweet tooth and you love peanuts this is the slice for you. The rice bubbles give it a delicious crunch and the peanuts go so well with the icing.
How to make Peanut Slice:
This recipe is so simple you just mix together the dry ingredients in a bowl and then pour in the melted butter and golden syrup. Make sure you chop up the peanuts otherwise slice will crumble quite a lot. Spread it all out on a tray lined with baking paper and bake it in the oven until golden.
As you can see from the pictures you can ice it either the caramel golden syrup icing or a rich dark chocolate icing made with cocoa powder. I like to ice the slice while it’s still slightly warm as it makes the icing spread out nicely.
This is the perfect slice to serve at morning or afternoon tea or take to share with friends, just check that no one has peanut allergies
It’s up to you whether you slice it into bars or into small bite size pieces, either way it’s delicious!

Crispy Peanut Slice
A golden and crispy peanut base with delicious caramel icing.
Ingredients
- 200g butter
- ½ cup sugar
- 2 Tbsp golden syrup
- 1½ cups flour
- 1 tsp baking powder
- 1 cup roasted peanuts, chopped
- 1½ cups rice bubbles
Chocolate icing
- 50g butter
- 1½ cups icing sugar
- 3 Tbsp cocoa
Caramel icing
- 50g butter
- 1½ cups icing sugar
- 2 Tbsp golden syrup
Instructions
- Preheat oven to 170°C fan bake.
- Melt together butter, sugar and golden syrup in the microwave or on the stove.
- Add flour, baking powder, chopped peanuts and rice bubbles to a bowl then pour in the melted butter mix. Stir all together to combine and then press the mixture into a lined tray.
- Bake for 25 minutes, then spread the chocolate or caramel icing over the warm base.
Notes
- Caramel Icing: Melt butter and golden syrup together (in the microwave or stovetop) then whisk together with icing sugar until smooth.
- Chocolate Icing: Melt butter and then whisk together with icing sugar and cocoa until smooth.

Hi there. Do you think I could substitute cornflakes for the rice bubbles?? This looks like a recipe my mum used to make. She died a few years ago aged 94. Most of her baking was done out of her head after having adapted an original recipe. Would love to replicate it.

This is a nostalgic recipe for so many people 🙂 I haven't tried it with cornflakes but I think it would work. It would be less 'crispy' and more 'crunchy' but I imagine very tasty. Let me know how you go.

Hi. Thanks for your advice. I used cornflakes and it worked fine. Slightly chewy but a bit of a crunch. I also added a 1/2 c of coconut because the mix was very wet. And from memory my mum used some coconut in her version. Was very yummy. Will make it again but I think I will reduce the butter
