I'm not sure if the pictures do it justice, but this Red Velvet Brownie is seriously fudgey and moreish! A gorgeous treat to make for someone special for Valentine's Day, Christmas or just because they deserve it. If you've never tried red velvet baking before, you'll love the slightly chocolatey taste.
The success to a good brownie lies in the amount of butter and sugar - that's why there's a lot of it! But all good things in moderation I say. You could make this recipe with or without the white chocolate, but I highly recommend you use it!
How to make Red Velvet Brownie:
Preheat the oven to 180°C fan bake. Line a 20cm square brownie tin with baking paper. Whisk together the melted butter and sugar. Add the egg, cocoa, vanilla and food colouring, whisking well after each addition.
Add the flour, baking powder and salt and mix to combine. Pour in the white vinegar and mix. Add the white chocolate chips and mix again.
Pour into the lined brownie tin, gently smooth the batter out to the edges of the tin. Bake for 24-28 minutes until crisp on top and just cooked in the centre.
Leave the brownie to cool in the tin. Cut into squares or use a cookie cutter to cut into shapes. Dust with icing sugar and serve.

Ingredients
- 150g butter, melted
- 1 cup sugar, 220g
- 1 egg
- 2 Tbsp cocoa
- 1 tsp vanilla extract
- 1-2 tsp red food colouring
- 1 cup plain flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp white vinegar
- 100g white chocolate chips
- Icing sugar, to serve

Notes
- To make these a little more festive, try using a Xmas tree cookie cutter. They look so cute and would also make a great gift.
