Made with pizza dough, pepperoni, mozzarella and pizza sauce, these pepperoni and cheese calzones are such a tasty treat. Ideal for a fun Friday night dinner, or warm lunch on the weekend, they are quick, easy and delicious!

My Italian-inspired Pepperoni and Cheese Calzones are made from dough that is rolled out into a circle, folded in half over a filling and sealed closed. It's definitely pretty similar to a pizza, but I love that this is like a tasty, warm little pocket of goodness that keeps everything inside. It makes for a great lunch or light dinner with a side salad.

Ingredient notes:
- Pizza Dough: For convenience, I bought pre-made dough from the supermarket. But you could always make your own. I have a really easy recipe for pizza dough on my website.
- Pizza Sauce: Any kind of pizza sauce or tomato paste will work for inside the calzone.
- Salami: I used pepperoni salami as that's what we like, but any of your favourite pizza toppings would be great.

Step by step instructions:
Preheat the oven to 210°C fan bake.
Divide the pizza dough into 4 even balls. On a lightly floured bench, roll out a ball of dough to 20 cm in diameter.
Place 1 tablespoon of pizza sauce on half of the circle, leaving a border of 2cm clear around the edge. Place 4 pieces of pepperoni on the pizza sauce. Top with approximately 40g of grated mozzarella.
Fold the remaining half of the dough over the toppings to create a semi-circle and press down the edges to seal. Fold and twist the edge. Repeat with the remaining dough until all four calzones are made.
Place the calzones on a lined baking tray and cut two small vents in the top.
Brush with olive oil then bake for 20 - 25 minutes until golden brown.

Other fillings you could add or swap: salami, ham, bacon, shredded chicken, mushrooms, capsicum, red onion and spinach.
