Chicken wrapped in prosciutto, cooked with fluffy gnocchi in a herby tomato sauce. An incredibly tasty meal!
One Pot Chicken and Gnocchi is my favourite type of meal - super tasty, filling and all made in one pot! To celebrate Wine Week at Countdown, I was asked to pair my favourite wine with this yummy meal. I chose the Church Road Pinot Gris which is one of my all time favourites and goes so well with the chicken.
If you've been following me for a while, you'll know I love a bargain. When Countdown has their themed Wine Week, I might splash out and get two bottles of wine instead of one. Then I keep one in the cupboard to share with friends at a later date. With so many amazing wines on sale this week, it's also a great time to expand your horizons and try something new!
How to make One Pot Chicken and Gnocchi:
Slice the two chicken breasts in half horizontally so that you have four thin pieces. Wrap each piece with prosciutto. Add olive oil to a large pan and bring to a medium heat. Add prosciutto-wrapped chicken and brown for a few minutes on each side.
Add in the garlic then gnocchi, cooking with the chicken. Mix Italian herbs and brown sugar with the stock, then pour into the pan. Pour in crushed tomatoes. Carefully mix everything together and simmer for 10 minutes until the chicken and gnocchi are cooked through.
Slice mozzarella into pieces and lay on top of gnocchi. Once mozzarella has melted, sprinkle over basil and serve with a fresh salad and crusty garlic bread.

Ingredients
- 80g prosciutto
- 500g chicken breast (2 pieces)
- 1 Tbsp olive oil
- 3 cloves garlic, crushed
- 500g gnocchi
- 1 Tbsp Italian herbs
- 1 Tbsp brown sugar
- 1 cup chicken stock
- 1 can crushed tomatoes, 400g
- 100g mozzarella
- Basil leaves to serve

Made this last night but unfortunately chicken became a bit dry (although that’s how my husband likes chicken thankfully!). Used 500g packet of chicken breasts but they were a lot larger than the ones in your video… so 80g prosciutto wasn’t nearly enough to wrap, so might double prosciutto next time. Also, are you meant to drain the can of crushed tomatoes first? Different brands might have slightly watery contents. Ours was watery! Flavours were good overall.
