This easy recipe for one pot chicken has Mediterranean flavours with garlic, herbs, cannellini beans and fresh tomatoes.
I can’t believe how delicious this one pot chicken drumstick recipe turned out, I made it by accident as I didn’t have much in the pantry and thought it was about time I used up some more cannellini beans.
I picked the delicious cherry tomatoes from my garden and knew that they would go so well with the delicious Mediterranean flavours of garlic, olive oil and basil. I decided to add cream cheese to this recipe because I knew that it would create a nice creamy sauce with chicken juices and lemon.
This recipe is super simple to make, first of all add the drained and rinsed cannellini beans to a large ovenproof dish. Then add chopped up herbs, garlic and fresh cherry tomatoes. Grate the zest of one lemon and then squeeze all of the juice, add the cream cheese and mix everything together. Now you have a delicious base and you can layer over the chicken drumsticks.
Brush each chicken drumstick with olive oil and season well with salt and pepper before covering the dish and baking for 20 minutes. After 20 minutes turn over the drumsticks and bake uncovered for 30 minutes until the chicken is cooked through and the mixture is bubbling underneath it.
You could easily mix this recipe up with different vegetables you have on hand. Serve your delicious one pot chicken with a fresh green salad and some crusty garlic bread.

Mediterranean style one pot chicken
Yield 4 serves
- 1 can cannellini beans, drained & rinsed
- 8 sage leaves, chopped
- 6 cloves garlic, chopped
- 1 lemon, zest & juice
- 2 Tbsp olive oil
- 250g cherry tomatoes
- 60g cream cheese
- 800g chicken drumsticks
- Combine all of the ingredients together in a ovenproof dish and give it a quick stir.
- Add chicken drumsticks on top and season well with salt and pepper.
- Bake at 180° fan bake for 20 minutes covered and then 30 minutes uncovered.
- Garnish with chopped fresh basil leaves and serve hot with a side salad and garlic bread.
