A one-pot meal of fresh pasta cooked in a flavoursome beef mince and tomato sauce, topped with melted parmesan and creamy ricotta. An efficient twist on the classic lasagne.
It doesn't get much easier than this epic One Pot Lasagne. All the flavour of a traditional lasagne but ready in quarter of the time. And the best part? Only one dish to clean!
Unless you've been living under a rock, you're probably familiar with my One Pot Mince and Pasta recipe already. This is one of the most popular recipes on my website. I have another similar one pot recipe in One Pot Chicken and Pasta.

Ingredient notes:
- Beef mince: This versatile dish could be made with any type of mince including chicken, pork, lamb or venison. I've gone for classic beef in this version.
- Fresh lasagne: This is the key to the quick cook lasagne! Fresh pasta cooks so much quicker in the pan so it's important you don't swap this out for dried pasta.
- Ricotta: Creamy ricotta compliments the beef and tomatoes so well. If you don't like it, you can absolutely leave it out.

Step by step instructions:
In a large frying pan, heat oil, add onion and sauté for a few minutes. Add the garlic and sun-dried tomatoes and stir for 2 minutes. Add the beef mince and use a spatula to break it up, fry until the mince has browned.
Add the dried herbs, sugar and tomato paste then stir it through the mince. Dissolve the stock cube in the boiling water then add to the pan along with the canned tomatoes, stir through the mince.
Roughly chop the fresh lasagne sheets into pieces then add to the pan and stir to coat in the mince mixture. Simmer on low for 10 minutes until the lasagne sheets have softened and most of the liquid has absorbed. Season to taste with salt and pepper.
Sprinkle over the parmesan cheese and add spoonfuls of the ricotta to the top.
Once the cheese has melted, serve immediately with fresh basil to garnish.
Recipe FAQs:
Unfortunately, no. The fresh pasta cooks/softens super quickly in the beef mince sauce. Dried pasta would require a lot more liquid and time to cook.
Fresh pasta is refrigerated and often near other meal ingredients like pizza bases, garlic bread or fresh soups.
Absolutely! This meal is so popular with children of all ages!
Storage:
Store any leftover one pot lasagne in an airtight container in the fridge for up to three days. Reheat until piping hot.
This dish can also be frozen. Store in an airtight container or freezer bag in the freezer for up to three months. Defrost completely before reheating.
Top tips:
Beef mince can be swapped for chicken, pork, lamb or even venison mince if you like. Or use a combination of pork and beef for some extra flavour!

One Pot Lasagne
A super easy one-pot lasagne made on the stove top from beef mince, homemade tomato sauce, fresh lasagne sheets and cheese.
Ingredients
- 1 Tbsp olive oil
- 1 onion, finely diced
- 3 cloves garlic, crushed
- 2 Tbsp sun-dried tomatoes, sliced
- 500g beef mince
- 2 tsp dried Italian herbs
- 1 tsp sugar
- 2 Tbsp tomato paste
- 1 vegetable stock cube
- 1 ½ cups boiling water
- 400g canned tomatoes
- 400g fresh lasagne sheets
- 50g parmesan cheese, grated
- 150g ricotta
- Fresh basil leaves, to serve

If I was to use dry lasagne sheets instead of fresh, how much extra liquid and time do you think I would need?

This is a hack meal that requires fresh lasagne as it is only cooked on the stove top. If you want to use dry lasagne sheets, I suggest baking a lasagne in the oven, I have a great recipe here Vanya Lasagne.

When freezing this, would you do it without the cheese and then add the cheese when reheating it?
