A tasty one-pot made from gnocchi cooked in a mushroom sauce made with cream, parmesan, garlic, vegetable stock and sun-dried tomatoes. Another excellent vegetarian meal.

Gnocchi is one of my all-time favourite comfort meals. This new recipe for Mushroom Gnocchi One Pot consists of gnocchi cooked in a creamy mushroom sauce flavoured with garlic and parmesan. This tasty vegetarian meal can be made in 20 minutes making it perfect for a busy weeknight.

Ingredient notes:
- Gnocchi: Any type of gnocchi can be used in this recipe. I was keen to try this brand when I saw it in my local supermarket, but any kind of gnocchi will work.
- Mushrooms: Feel free to use your favourite mushrooms in this recipe including white, brown, shitake, oyster or portobello mushrooms.
- Stock: I used a vegetable stock cube mixed with boiling water in this recipe but you could also use homemade stock or store-bought liquid stock if you prefer.

Step by step instructions:
Heat a large frying pan over a medium heat and add the oil. Place the sliced mushrooms in the pan and sauté for a few minutes until soft.
In a small jug mix the boiling water and stock cube, set aside. Add the crushed garlic and sun dried tomatoes to the pan and stir through the mushrooms.
Pour in the stock to deglaze the pan. Add the gnocchi and cream, stir to combine then bring the pan to a simmer for 3 minutes.
Sprinkle over the parmesan and stir through.
Add the chopped parsley, mix to combine then serve immediately.

Storage:
Store any leftover mushroom gnocchi in an airtight container in the fridge for up to three days. Reheat until piping hot.
Top tips:
If you want to make this gluten free, you can use gluten free gnocchi. As always, check the labels on all your other processed food to ensure they are gluten free.

Mushroom Gnocchi
A one pot meal made from gnocchi cooked in a mushroom sauce made with cream, parmesan, garlic, vegetable stock and sun-dried tomatoes.

- 2 tsp olive oil
- 200g mushrooms, sliced
- 1 vegetable stock cube
- 1 ½ cups boiling water
- 1 clove garlic, crushed
- 2 Tbsp sundried tomatoes, chopped
- 500g gnocchi
- 1 cup cream
- 50g parmesan, grated
- 2 Tbsp fresh parsley, chopped

Very tasty dish. Used vacuum packed gnocchi l right out of package. Simmered on low once fully assembled about 20+ minutes. May be beneficial to par boil the gnocchi 1st.
