This super simple and delicious recipe for multi cooker Mexican chicken and rice is a family favourite.
If you follow me on instagram, you may have noticed that I often cook a double batch of dinner. One for that night and one for the freezer! If you like getting ahead like me, then you are going to love my epic recipe for Mexican Chicken and rice.
This meal makes enough for between 4-5 meals (depending on your portion sizes) and can be used in so many different ways. Taking only minutes to prepare and cook, this will soon become one of your favourite family recipes.
Another great thing about this recipe is that it's made from a lot of pantry staples. For this particular version, I keep the spice level quite mild because that's the way our kids like it. But feel free to add a diced onion and some crushed chilli to the multi cooker if you like things a little hotter. HOW TO MAKE mexican chicken and rice in the multi cooker:
Cooking really doesn't get much easier than this recipe! Made in my multi cooker the whole dish is ready in under half an hour. Start by placing all the ingredients (except for the grated cheese) in the multi cooker and stirring well. Turn onto manual pressure for 15 minutes. The multi cooker will take a few minutes to warm up before it starts to cook.
When it has finished cooking, release the pressure valve and carefully release the lid. Stir in the grated cheese and serve immediately with your choice of meal.
Let it cool before storing any leftovers in airtight containers in the freezer.
COMMON QUESTIONS ABOUT this recipe:
How many meals does this make? I can get 5 meals from this recipe, each around 600g. There are 2 adults and 2 children in my family and that's enough for us but you may like more or less.
What meals can I use Mexican Chicken and rice in? This base recipe can be used in so many different ways! As you can see below in the photo examples I've used it in quesadillas, nachos and burrito bowls. But tacos, enchiladas, baked potatoes, burritos and wraps are also great ideas. Simply add some corn chips for an easy kids meal or pad it out with corn chips and all your favourite vegetables and sides for epic nachos.
Which brand of Multi Cooker do I use?: I use a Russell Hobbs Express Chef Digital Multi Cooker which I was gifted and I really love it. So many different functions I haven't even tried yet. I have mainly been using the pressure cooking manual mode.
What are the other names for a Multi Cooker?: In the USA they are called Instant Pots. In New Zealand and Australia they can be called Magic pot, Digital Pressure cooker, All in one cooker & Crockpot express.
Can I make it without a Multi Cooker? Sure. This recipe has been designed specifically for a multi cooker but you could try it either it in a slow cooker or bake it in the oven.
To cook in a slow cooker: I would suggest adding all the ingredients except for grated cheese, chicken stock and rice to the slow cooker. Cook the chicken mix on high for 4 hours/low for 6 hours, or until the chicken has cooked through. Finally add the grated cheese and three cups of cooked rice.
To bake in the oven: I would suggest adding all the ingredients except the cheese to a large oven proof dish with a lid, stir together well then bake at 180.C degrees for an hour, or until the chicken and rice are both cooked. Stir through the grated cheese before serving. Similar method to my recipe for Baked Mexican Meatballs and Rice.

Multi Cooker Mexican Chicken and rice

Ingredients
- 1 kg chicken thighs, diced
- 1 can red kidney beans, drained
- 1 can black beans, drained
- 1 can corn kernels, drained
- 1 can crushed tomatoes
- 1.5 cups white rice
- 1.5 cups chicken stock
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 cup grated cheese
Instructions
- Add everything apart from the grated cheese to the multi cooker and stir well to combine.
- Turn onto manual pressure - 15 minutes, the multi cooker will take a few minutes to heat up before it starts to cook.
- Once it has finished release the pressure valve carefully then remove the lid.
- Stir well to get any rice off the bottom of the bowl and then stir through the cup of grated cheese.
- Now your Mexican chicken is ready to serve in the meal of your choice or let it cool and freeze it for later.
Notes
- Serving ideas: tacos, wraps, burritos, enchiladas, quesadillas, baked potatoes, burrito bowls, nachos.
- I have made this recipe very mild they way my kids like it so if you want a little bit more heat and flavour you can add a diced onion and crushed chilli to the multi cooker at the start with the rest of the ingredients.
- Once the Mexican chicken and rice has cooled divide it between airtight containers then label and store in the freezer for up to 3 months.
- Thaw overnight in the fridge or cook from frozen in the oven in an oven-proof dish.

Can you make the multicooker chicken and rice in a regular stove top manual pressure cooker? If I cooked it in that do you have any idea if I should cook it on full pressure and for how long? Or would it be the same as in a multicooker?

Whilst nice and easy 15minutes was no where near enough time in the multicooker. After this time the rice was still crunchy. Will have to add more liquid and cook for longer next time. Just need to work out how much more of each is needed.
