Caramelised, spiced apples encased in a sweet, short crust pastry pie with an impressive lattice topping. A lovely pie to share with friends and family. Serve with pouring, or freshly whipped cream.
The saying goes "as American as apple pie". Meaning something is typically American. However, Europeans were making apple pie long before America was colonised! The most impressive apple pie I've ever had was Dutch apple pie from a wee cafe in Amsterdam.
The key to a beautiful Lattice Apple Pie is sweet short crust pastry. Unlike flaky pastry, short pastry is buttery, soft and melt-in-your mouth. Which goes so well with the caramelised apples and fresh cream. Enjoy!

Ingredient notes:
- Apples: I opted for some Braeburn apples for this pie - purely because they were on special at the supermarket! Check out my notes below on the best type of baking apples.
- Pastry: I used store-bough sweet, short crust pastry as I had some in the freezer ready to use. If you want to try your hand at making your own check out my Sweet Short Pastry recipe.

Step by step instructions:
Add apples, butter, brown and white sugar to a saucepan and bring to the boil.
Cook for 10 minutes or until the apples start to soften.
Add the vanilla, sifted flour and spices, stir until thickened, remove from the heat to cool.
Grease a 23cm pie dish and preheat oven to 200°C fan bake. Roll out half the pastry to line the pie dish, add the apple filling.
Roll out the remaining pastry and cut into strips. Create a lattice top by weaving the strips together.
Egg wash the top and sprinkle with white sugar, place towards the bottom of the oven and bake for 30-40 minutes.
Remove and allow the pie to cool before slicing. Serve warm or cold with fresh cream or ice cream.
Recipe FAQs:
While all apples are delicious (in my opinion) not all apples are suitable for baking. The best baking apples in New Zealand are Braeburn, Granny Smith, Golden Delicious, Gravenstein and Ballarat.

Storage:
This pie can be made in advance as it is nice to eat warm or cold.
Store any leftovers in an airtight container in the fridge for up to three days.

Lattice Apple Pie
Spiced, caramelised apples baked in a sweet, shortcrust pastry pie.
Ingredients
- 5 large apples, peeled & diced
- 45g butter
- ½ cup brown sugar
- ¼ cup white sugar
- ½ tsp vanilla
- 2 Tbsp flour
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 800g shortcrust pastry
- 1 egg, whisked
Instructions

- You can use any of your favourite apples, this recipe was made with tart apples so if you use a sweet variety just reduce the sugar slightly or increase it to your liking
