Potatoes are a winner no matter which way you cook them. Why not try something different and give this delicious recipe for Haloumi and Chorizo Curried Potatoes a go? The combination of flavours is so good! Serve with fresh rocket for a nice peppery hit of greens.
Any type of potatoes will work in this recipe. I quite like agria potatoes because they are nice and floury and bake really well. Feel free to peel them if you like but I always leave the skins on. This saves me time and means I get even more nutrients out of them.
How to make Haloumi & Chorizo Curried Potatoes:
Preheat oven to 200°C fan bake. In a large bowl mix the potatoes, garlic, curry powder, herbs, coriander and olive oil. Season with salt and pepper and mix to coat the potatoes.
Place on a lined baking tray and cook for 20 minutes. Toss the chorizo, capsicum and onions through the potatoes. Return to the oven to bake for another 20 minutes until potatoes are cooked through.
Fry the eggs to your liking. Fry the haloumi for 1 minute on each side until golden brown.
Serve potatoes topped with the fried eggs, haloumi and a handful of fresh rocket. Top with a drizzle of sriracha and smoky mayo.

Common questions and tips for Curried Potatoes with Haloumi :
Can I make this as a vegetarian meal? Yes, if you leave out the chorizo, this meal would be vegetarian.
Is this meal really spicy? If you use a mild curry powder it won't be too spicy and pretty kid friendly.
TIPS
- Use a nonstick pan for the haloumi and cook it last minute so you can eat it hot. That’s when it is most delicious.

Haloumi & Chorizo Curried Potatoes
Perfectly flavoured curried potatoes baked with capsicum, onion and chorizo, served with golden haloumi, fresh rocket and a fried egg.
Ingredients
- 1kg potatoes, cut into chunks
- 2 cloves garlic, crushed
- 2 Tbsp curry powder
- 1 Tbsp mixed herbs
- 1 Tbsp ground coriander
- 2 Tbsp olive oil
- 100g chorizo, diced
- 1 capsicum, diced
- 1 red onion, sliced
- 1⁄2 brown onion, sliced
- 4 eggs
- 200g haloumi, sliced
- 60g rocket leaves
- Sriracha sauce, optional
- Smoky chipotle mayo
Instructions
