You won’t believe how easy and delicious this recipe for Sweet Chilli Chicken Noodles is! Using Hokkien noodles and sweet chilli sauce it is packed full of flavour and ready in under 25 minutes.

- Hokkien Noodles: Thick egg noodles that originate from China.
- Sweet Chilli: I use this sweet chilli sauce in so many of my Asian-style recipes. It is the perfect blend of sweet and spicy. Grab a 'hot' version if you like to take things up a notch!
- Chicken: Chicken breast is perfect for a stir fry meal like this.

Step by step instructions:
Pour boiling water over the noodles and leave to sit for two minutes to loosen. Drain, then set aside.
Add the oil to a large non-stick frying pan. Add the chicken and cook until brown on both sides.
Add the capsicum and bok choy along with the water and stir fry until the bok choy has wilted.
Add the drained noodles and sweet chilli sauce and stir to coat in the sauce. Stir fry for five minutes until the noodles are starting to caramelise in the sweet chilli sauce.
Stir in the soy sauce and spring onion then sprinkle over the sesame seeds. Divide into 4 serving bowls and serve immediately.

Any other type of noodle that you can stir fry would work. Udon, Soba, Ramen or smaller types of egg noodle would all work. Cook them according to packet instructions before adding to the pan.

- 400g Hokkien Noodles
- 1 tsp oil
- 450g chicken breast, sliced
- ½ red capsicum, sliced
- 150g bok choy, chopped
- 2 Tbsp water
- ¼ cup Sweet Chilli Sauce
- 2 Tbsp soy sauce
- 1 spring onion, sliced
- 1 Tbsp sesame seeds
