Grilled chicken meatballs served with stir fried vegetables and egg noodles in a honey soy sauce. An easy and nutritious meal that's ready in 35 minutes can be enjoyed by the whole family.
When it comes to meatballs, many people stick to tried-and-true, beef mince. I encourage you to try something new and give these Chicken Meatballs with Noodles a go! Packed full of herby goodness, these meatballs make such a lovely change from red meat.
I love these ribbon cut egg noodles. They taste great and they look so good in the bowl. But feel free to substitute for your favourite type of noodles. Likewise, if you can't find chicken mince, you could use pork or lamb mince instead.
How to make Chicken Meatballs with Noodles :
Preheat oven to 180°C fan grill. Add all of the meatball ingredients to a bowl and mix until well combined. Roll the mixture into balls and place on a lined baking tray. Drizzle over 1 tablespoon of oil.
Grill the meatballs on high for 10-15 minutes until cooked through, use tongs to turn to brown all sides. Mix the sauce ingredients together in a small bowl, microwave for 20 seconds to melt the honey.
Wash the bok choy and chop into chunks, keeping the leafy green parts separate. Cook the noodles according to packet instructions.
Heat 1 tablespoon of oil in a frying pan and fry the vegetables for a few minutes. Add the cooked meatballs and leafy greens from the bok choy. Pour in the honey and soy sauce then stir to coat the meatballs and vegetables.
Drain the noodles and serve topped with the meatballs, vegetables and sauce. Garnish with extra coriander and sesame seeds.

Yes, you could freeze them once cooked. You could also freeze the raw meatballs as long as the mince was fresh (hadn't already been frozen).
Any type of noodles such as egg noodles, vermicelli or spaghetti work well with Asian Meatballs.. You could also serve the meatballs on rice if you prefer.
If you can't find chicken mince (or it's not your favourite) you can easily substitute it for pork mince.

Herby chicken meatballs grilled in the oven served with stir fry veggies and egg noodles.
Ingredients
Meatballs
- 500g chicken mince
- 1⁄2 onion, finely diced
- 2 cloves garlic, crushed
- 1⁄4 cup chopped coriander
- 1⁄2 tsp salt
- 2 tsp lemongrass paste
- 3 Tbsp breadcrumbs
Honey soy sauce
- 1⁄3 cup soy sauce
- 1⁄2 tsp chilli flakes, optional
- 2 Tbsp sesame oil
- 2 Tbsp honey
Stir fry
- 2 Tbsp oil
- 3 bok choy
- 1 carrot, sliced
- 1 red capsicum, sliced
- 280g packet dried egg noodles
- 1 Tbsp sesame seeds
Instructions

I made this tonight and loved it! Easy and quick to make, with great flavour. I cooked the meatballs in the airfryer - no waiting on the oven to heat 🙂 I also didn’t have lemon grass and skipped the chilli (kids) but the coriander still provided plenty of flavour! My only complaint (if you can call it that) was there was not enough sauce but that’s an easy fix next time!
