Spicy Pork Mince cooked in a homemade Chinese Style sauce with rice noodles and fresh vegetables.
This easy recipe for Pork Mince Noodle Stir Fry is full of yummy big flavours. The homemade sauce hits all the right notes. Aromatic Chinese 5 Spice compliments the salty soy sauce and sweet chilli perfectly.
As always, feel free to use my ingredients as a guide. You could easily substitute in white or brown rice for the noodles, chicken or beef mince for the pork mince and any of your favourite veg.
How to make Pork Noodles:
Heat oil in a large frying pan, add pork mince and fry for 5 minutes, breaking up the mince with a wooden spoon. Add the dried rice noodles and chopped broccoli to a bowl and pour boiling water over to cover. Leave it to sit for 5 minutes while you make the pork or until the noodles are tender (if your noodles have different instructions on the packet, follow those instead). Add garlic, ginger and 5 spice powder to the frying pan and stir through the pork. Add the spring onion and capsicum then stir fry for 3 minutes.
In a small jug mix together the soy sauce, brown sugar, sweet chilli sauce and peanut butter. Pour over the mince and stir together. Drain noodles and broccoli then add to the frying pan, pour in the stock and stir.
Simmer for a few minutes until cooked through and the sauce has thickened up. Scatter over sesame seeds and serve immediately.

Storage:
Store any leftovers in an airtight container in the fridge for up to three days. Reheat until piping hot and the pork is heated through. These ingredients don't stand up well to freezing.

Ingredients

This was a lovely flavoursome recipe, and I would definitely make it again. However, next time, I will follow the instructions on the flat rice noodles I bought, as I followed your instructions and the noodles were really undercooked. The packet on my instructions said to cook in boiling water for8 minutes and drain. Still a lovely dish though.

Very yummy. I cooked the noodles based on the packets instructions and then added them. They were too soft so maybe cook one 2 less mins and then add to the saucepan.

Made this on a whim when I had some pork mince to use. Absolutely delicious and a real hit with the whole family, kids included! Will definitely be adding it to our weekly recipes. I didn't have chinese 5 spice but after consulting google I used garam masala and it still tasted good!
