A super simple but tasty beef chow mein made from beef mince, fresh veggies, egg noodles and a homemade chow mein sauce. Another easy, 30 minute meal.

This One Pot Beef Chow Mein is another quick and easy weeknight dinner. Packed with fresh vegetables, pre-cooked egg noodles and beef mince, everything cooks in one pan making this a fuss-free meal that's ready in under 30 minutes. Ingredient notes:

- Mince: This recipe calls for beef mince. In a recipe like this I try and buy the lowest % fat mince available. You could also use lamb, beef, venison or pork mince if you prefer.
- Fresh egg noodles: These can be found in the chilled section of all good supermarkets.
- Oyster Sauce: This gives the the chow mein its lovely rich, savoury flavour.

Step by step instructions:
Mix together the ingredients for the chow mein sauce, set aside.


Heat a large frying pan over a medium heat then add the oil. Add the sliced onion and cook for 2 minutes. Add the beef mince and cook until it has browned. Stir in the crushed garlic.


Add the carrots and capsicum to the pan along with ¼ cup water and sauté for a few minutes. Add the egg noodles, stir to combine. Then pour over the sauce.


Stir fry all the ingredients together to coat in the sauce for a further 2 minutes. Pour into a large serving bowl or individual bowls. Sprinkle with sesame seeds and serve.

It's not. The egg noodles are made with wheat flour, and the sauce contains soy sauce and oyster sauce which both contain gluten. To make this gluten free, you could use cooked rice noodles (either pad Thai or vermicelli) and ensure all your sauces are gluten free versions.
Yes, simply store your cooked beef chow mein in an airtight container in the fridge for up to three days. Then reheat in the microwave or on the stovetop, adding a splash of water to loosen up the sauce if needed.
Pork mince, chicken mince, venison mince or even finely sliced beef strips work well in this recipe.
Storage:
Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in a frying pan with a splash of water until piping hot. Freeze for up to 3 months.
Top tips:
- Add extra vegetables such as cabbage, snow peas, mushrooms or broccoli.
- For a little heat, stir through a teaspoon of chilli flakes or sweet chilli sauce.
- Fresh ginger pairs beautifully with the garlic and beef.
- If using dried noodles, cook them according to packet instructions before adding them to the pan.
- Toast the sesame seeds in a dry frying pan for extra flavour.

Chow Mein Stir Fry
- 2 tsp Oil
