This recipe is a special one for me as it came straight from my Grandma Bonnie's handwritten recipe book. Bonnie's Pikelets are famous within our family not only for how delicious they are, but also for the way she delivered them. Grandma Bonnie would pre-make the pikelets at home, then bring them over to our house in a cute basket wrapped in a tea towel. How special are grandparents?

Ingredient notes:
- Flour: This recipe calls for plain flour. You could also use gluten free flour if you prefer.
- Milk: I used standard milk in this recipe. Alternative milks will also work including rice, almond or oat milk.
- Egg: This recipe calls for a standard size 7 egg.

Step by step instructions:
Sift the flour and baking powder into a large bowl. Add the sugar and salt, then whisk together and make a well in the centre.
Add the whisked egg and milk into the well. Then fold the mixture together until just combined.
Heat a large frying pan over medium heat. Lightly grease the pan with butter or oil.
Spoon batter into the pan and cook until bubbles form on the surface of each pikelet, then turn and cook the other side until golden.
Serve with butter, jam and whipped cream.

- ¼ cup sugar, 50g
- ½ teaspoon salt
- 1 egg, whisked
- 1 cup milk
