Irresistible little cheesecake balls made from crushed Tim Tam biscuits mixed with cream cheese then topped with melted dark chocolate!

If you're looking for your next little sweet treat, look no further than our Tim Tam Cheesecake Balls. Crushed choccy bikkies combined with cream cheese form the delicious filling. They are then dipped in dark chocolate and topped with more crushed Tim Tams! Perfect to serve to guests or enjoy with your cup of tea after dinner. Ingredient notes:

- Tim Tams: Everyone's favourite chocolate biscuit gets an upgrade in these delicious cheesecake balls! And good news for our gluten free friends - you can use the gluten free Tim Tams for this recipe!
- Cream cheese: This is what gives these treats their signature cheesecake flavour.
- Dark Chocolate: Feel free to use any type of chocolate on top of these. My favourite is Whittaker's 50% dark chocolate but you could use milk chocolate, white chocolate or even Caramilk if you prefer!

Step by step instructions:
Set one Tim Tam aside for the topping. Add the remaining biscuits to a food processor and blitz until fine crumbs form.


Add the cream cheese and blitz again until well combined and the mixture comes together.


Scoop the mixture into heaped tablespoon portions. I used a small cookie dough scoop to make this easier. Roll into 14 balls and place on a plate. Add the dark chocolate to a heatproof glass bowl and microwave in 30-second bursts, stirring each time, until smooth and melted.


Dip each cheesecake ball into the melted chocolate, turning to coat completely, then place on a tray lined with baking paper.


Crush the reserved Tim Tam and sprinkle over the balls while the chocolate is still wet.
Place in the fridge for 1 hour or until set. Store in an airtight container in the fridge for up to 1 week.
