Make these White Chocolate and Raspberry Tim Tam Balls from a filling of crushed white chocolate Tim Tams combined with cream cheese, a dash of lemon zest and freeze-dried raspberries. Then dip in melted white chocolate and sprinkled with more freeze-dried raspberries! The ultimate sweet treat, especially for those who prefer white chocolate to dark.

- Freeze-dried raspberries: These aren't cheap, but they add a lot of flavour to these cheesecake balls. You can find them in most major supermarkets.

Step by step instructions:
Add the Tim Tams to a food processor and blitz until fine crumbs form.


Add the cream cheese, lemon juice and lemon zest, then blitz again until the mixture comes together. Add the freeze-dried raspberries and pulse a few times until combined, leaving a few small pieces for texture.


Scoop the mixture into 12 portions. I used a small cookie dough scoop to make this easier. Roll into balls and place on a plate or tray. Place the balls in the freezer for 20 minutes to firm up and help them hold their shape.


Add the white chocolate to a heatproof bowl and melt gently in the microwave in short bursts, stirring between each burst until smooth. Be careful not to overheat the chocolate as white chocolate can seize easily. Dip each cheesecake ball into the melted chocolate, turning to coat completely, then place on a tray lined with baking paper.


Sprinkle over a few extra crushed freeze-dried raspberries while the chocolate is still wet. Place in the fridge for 1 hour or until set. Store in an airtight container in the fridge for up to 1 week.
