If you're on the look out for a (semi) healthy afternoon pick-me-up, look no further than my frozen, Date and Chocolate Bark. This is super simple to make and requires zero baking. Simply blitz the dates, roll them out, then top with peanut butter, chopped walnuts, melted chocolate and sea salt. This bark is like an easy, (semi) healthy Snickers bar. Best eaten frozen, this is a great treat to keep in the freezer for up to three months.

Ingredient notes:

- Dates: Naturally sweet and chewy, dates form the perfect base for this frozen treat.
- Peanut butter: Adds creaminess and a nutty contrast to the chewy dates and dark chocolate.
- Dark chocolate: This is what elevates the bark from a simple bliss-ball style recipe to a decadent treat. The dark chocolate tastes even better when sprinkled with the optional sea salt.

Step by step instructions:
Line a flat baking tray with baking paper. Place the dates in a food processor and blitz until totally smooth and the date paste starts to form a ball.


Tip the dates onto the lined tray. Place a second piece of baking paper on top and roll the dates out until approximately 5mm thick.


Spread the peanut butter over the date mix and sprinkle over the chopped walnuts. Place the chocolate pieces in a glass bowl. Heat in the microwave in 30 second bursts until starting to melt.


Mix chocolate until smooth then pour over the peanut butter. Spread out to the edges. Sprinkle with sea salt if desired.


Place in the freezer until set. Cut into slices then place back in the freezer in an airtight container. Enjoy the bark frozen, straight out of the freezer.

- ¼ cup chopped walnuts
- 100g dark chocolate, chopped
- Sea salt (optional)

Hi VJ! This was AMAZING! Perfect healthier sweet treat, only thing I noticed is that I froze overnight and next day it was still very hard to cut as the date at the bottom was very chewy, did you also have this with your ones?

I know, this one is addictive! Just leave it on the bench for 10 minutes before cutting and it will soften up nicely.
