Quick, easy and nutritious fried rice made with grated mushrooms and mixed frozen veggies. Finish with a fried egg and fresh chilli.

You won't believe how easy it is to make this super tasty meal. Mushroom Fried Rice is full of delicious flavours including the secret ingredient - grated mushrooms! This recipe calls for 2 cups of cooked rice. I often use leftover rice from the previous day's meal. This saves me time, but also allows the rice to dry out a little bit. If your rice is too wet it can make the dish a little gluggy. If you do make fresh rice, a good trick is to lay it out on a baking tray to dry out a bit before using it.

How to make Mushroom Fried Rice:
Grate the mushrooms. Heat oil in a large frying pan over a medium heat. Add the grated mushrooms and stir fry for a few minutes.


Add the rice and stir to combine with the mushrooms. Fry for a few more minutes stirring, then pour in the mixed veggies. Add the sweet chilli and soy sauce and stir until it is all coated. Scatter over spring onion. Once everything is piping hot and combined, divide between two bowls.


In a separate frying pan, fry eggs in a little bit of oil or butter until cooked to your liking. Serve the mushroom fried rice with a fried egg on top and extra spring onion to garnish

Sure thing. This dish still tastes yummy without a fried egg on top.
Absolutely. I like to use up whatever I have leftover. Just be mindful that brown rice takes longer to cook than white rice if you're cooking it from scratch.

Storage:
Store any leftover mushroom fried rice in an airtight container in the fridge for up to three days. Reheat on the stovetop or in the microwave until piping hot.
Top tips:
This recipe works really well with day-old rice as it will have dried out a little. If you want to make it with freshly cooked rice, I recommend adding in some drying-out time. Once the rice has finished cooking, lay it out on a baking tray to help dry it out, before adding it to the pan later on.

Ingredients
- 1 Tbsp sesame oil
- 200g Swiss brown mushrooms, grated
- 2 cups cooked rice
- 1 cup mixed veggies
- 2 Tbsp sweet chilli sauce
- 2 Tbsp soy sauce
- 1 spring onion, finely sliced
- 2 eggs, fried
