A tasty fried rice made from marinated beef strips pan-fried with broccoli and cooked rice in a soy, oyster and sweet chilli sauce. An easy dinner and an excellent meal-prep option.

This Beef and Broccoli Fried Rice is a quick and flavour-packed dinner that's perfect for busy weeknights. Tender marinated beef, crisp broccoli and fluffy rice are tossed together in a savoury, slightly sweet sauce that the whole family will love. - Beef: Using pre-cut stir-fry beef keeps this recipe quick and easy. Marinating it with baking soda helps tenderise the meat so it stays soft and juicy when cooked on high heat.
- Broccoli: Blanching the broccoli briefly in boiling water before stir-frying keeps it bright green and tender without overcooking it in the pan.
- Cooked rice: Cold, cooked rice works best for fried rice as it's drier and less likely to clump together. Fresh rice can go mushy, so leftover rice is ideal here.

Step by step instructions:
In a medium bowl, whisk together the soy sauce, sesame oil, baking soda, white pepper and cornflour. Add the beef and mix to coat. Set aside to marinate for 20 minutes. Place the broccoli florets in a bowl and cover with boiling water. Leave to sit while you cook the beef.


In a small jug, whisk together all of the sauce ingredients. Heat the oil in a large frying pan or wok over high heat. Add the beef and stir fry for 5 minutes, until golden brown. Remove from the pan and set aside.


Add the onion to the pan along with a splash of water to deglaze. Cook, stirring for 5 minutes until softened. Add the crushed garlic and drained broccoli, then cook for 2 minutes.


Add the rice and prepared sauce. Stir fry on high heat for 2 minutes, breaking up any clumps. Return the beef to the pan and mix everything together until well combined and heated through.


Sprinkle over the sesame seeds and serve immediately.

Recipe FAQs:
Yes, sirloin, rump or scotch fillet all work well. Just slice thinly against the grain to keep the beef tender.
Oyster sauce adds depth and savoury flavour, but you can substitute with hoisin sauce or an extra tablespoon of soy sauce if needed.
Absolutely. Capsicum, carrot, snow peas or mushrooms are all great additions and easy to swap in depending on what you have on hand.
Storage:
Store leftovers in an airtight container in the fridge for up to four days. Reheat in a hot pan or microwave until piping hot. This recipe isn't ideal for freezing.

This recipe is ideal for meal prep! Simply divide the stir fry into four containers, allow to cool completely, cover and place in the fridge for up to four days.

- 1 tbsp soy sauce
