A Christmas-themed chocolate salami made with chocolate, cream, butter, crushed biscuits, shelled pistachios and cranberries. A wonderful treat to make for friends and family.
Whether gifting pieces to friends, or serving on a platter, my Chocolate Salami is a wonderful treat to make during the festive season. Simply melt the chocolate, butter and cream together then add the crushed bikkies, cranberries and shelled pistachios. Roll, chill then slice!

Ingredient notes:
- Chocolate: I used 50% dark chocolate to make my salami. You could use an even darker variety (72% etc) or milk chocolate if you prefer.
- Biscuits: I love the buttery goodness of scotch fingers but as always, feel free to use your favourite bikkies!
- Butter: I use salted butter in all my butter because I like the flavour of it. You can use unsalted butter if you prefer.

Step by step instructions:
Add the dark chocolate, cream, and butter to a large glass bowl. Cover and microwave for 1 minute.
Let sit for 3 minutes, then stir until smooth and combined. Roughly crush the biscuits and add them to the bowl along with the pistachios and cranberries.
Mix until well combined. Spoon the mixture onto a large piece of clingfilm.
Shape into a log, roll up the clingfilm, and twist the ends to seal. Refrigerate overnight until firm.
Roll the salami in icing sugar to coat. Slice and serve. Keep chilled until ready to use.

Yes it can! Simply swap the regular Scotch Fingers for gluten free Scotch Fingers (or any gluten free biscuits of your choosing!).
Storage:
Store your Chocolate Salami in an airtight container in the fridge for up to 2 weeks.
Chocolate Salami freezes well for up to 3 months—just defrost overnight in the fridge.
Top tips:
This would make for a lovely Christmas gift either for friends, family, teachers or colleagues. You could slice pieces up and place them in a bag or roll the log in paper to look like a Christmas cracker!

How long should the rolled log be?

That's totally up to you! I like my pieces to be about 7cm wide so I focus more on the diameter of the circle than the length.
