Marinated chicken skewers, grilled on the BBQ then served with a homemade tangy satay sauce, slices of lime and coriander. A very fresh and tasty dish to serve at your next summer BBQ. These always go quickly!
I've been to a few BBQs in my time and I know how popular chicken skewers are - you've gotta get in quick before they all go!
These BBQ Satay Chicken Skewers are no exception. Grilled on the BBQ then served with the creamy, homemade satay sauce and fresh lime, these chicken skewers are bursting with flavour. Ingredient notes:
- Chicken: Either chicken breast or chicken thigh can be used to make skewers. Chicken thighs are less likely to dry out.
- Peanut butter: Does anyone else have a 'kids' peanut butter and an 'adults' peanut butter in their pantry? (Hint: one is more expensive/fancy than the other). I always use the kids' one for cooking and baking.
- Lime: Limes are not always available. And when they are - they can be expensive! You could easily use lime juice or lemons as a substitute for fresh lime.

Step by step instructions:
Slice each chicken thigh into 3 even strips and thread onto 6 skewers. Place in a large container.
Mix together all of the ingredients for the satay sauce.
Pour ¼ cup of the sauce over the chicken skewers, ensuring they are evenly coated. Place the remaining satay sauce in the fridge.
Cover the chicken and place in the fridge for at least 30 minutes.
Before you cook the chicken, place the reserved satay sauce in a saucepan and gently cook over a medium heat.
Add the coconut cream and bring the sauce to a boil. Reduce to a simmer and cook, stirring for 10 minutes. Remove from the heat and add the lime juice.
Meanwhile, cook the chicken skewers on the BBQ for 15-20 minutes until cooked through
Serve the chicken skewers drizzled in the satay sauce with fresh coriander and lime wedges.
Recipe FAQs:
Yes. Chicken skewers can be made from either chicken thighs or chicken breast. Either cut the chicken into strips or dice it into cubes before inserting onto the metal skewers.
Limes can be very expensive or simply unavailable. Lemon is a good substitute for lime.
Storage:
Store any leftover BBQ chicken skewers in an airtight container in the fridge for up to 2 days. Either eat the cooked chicken cold, or reheat until piping hot.
Top tips:
Keen to get ahead? The chicken can be marinated the night before you want to serve it. The satay sauce could be made at the same time, then placed in an airtight container in the fridge overnight.

- 500g boneless chicken thighs
- ½ cup coconut cream
- 1 Tbsp lime juice
- Coriander or parsley to serve

Satay sauce

- ½ cup boiling water
- ¼ cup sweet chilli sauce
- 1 Tbsp brown sugar
- 2 tsp ginger
- ¼ cup soy sauce
