A warming and nutritious soup made from diced potatoes, onion, carrots, celery, crushed garlic mixed herbs and vegetable soup mix. A super simple slow cooker meal.

Soup is such a great meal to make over the cooler months. For this Slow Cooker Vegetable Soup I've made the process even easier by cooking it in a slow cooker. You simply add the ingredients to the dish, then let it do all the cooking for you. Feel free to customise this with your favourite vegetables. You could even add some protein in the form of shredded chicken or bacon if you like.

Ingredient notes:

- Base vegetables: I used a combination of potatoes, carrot and celery. You could also use kumara, leek and parsnips or any other vegetables you want to use up.
- Dried herbs: If you have fresh herbs available to you, feel free to use those instead!
- King vegetable soup mix: This is a classic New Zealand and Australian packet soup mix. It contains lentils, grains and vegetable stock. You can substitute for your preferred soup mix easily.

Step by step instructions:
Add the diced potatoes, onion, carrots and celery to the base of a slow cooker. Stir through the crushed garlic and mixed herbs. Pour over the dry soup mix and mix everything together well.


Carefully pour in the boiling water and stir to combine. Cover and cook on high for 4-5 hours or low for 7-8 hours, until the vegetables are tender.


Season well with salt and pepper to taste then serve with crusty bread on the side.

Ingredients
- 3 medium potatoes, peeled and diced
- 1 onion, diced
- 2 carrots, diced
- 1 stick of celery, diced
- 2 cloves garlic, crushed
- 1 Tbsp mixed dried herbs
- 1 packet King's vegetable soup mix (210g)
- 1.5 litres boiling water
Instructions
