Slices of grilled lamb steaks served with spiced, air fried cauliflower bites, cucumber, tomato, flatbreads and tzatziki in a mezze bowl. An easy and tasty mid-week dinner or sharing meal.

I've always loved cauliflower cooked in the oven. But like most things, cauliflower cooked in the air fryer is so much easier and quicker! It works so well in these delicious Lamb and Cauliflower Mezze Bowls. Grilled, sliced lamb steaks, fresh cucumber and tomato, tangy tzatziki, spiced air fryer cauliflower bites and flatbreads. This is a super easy meal to prepare for family and friends on a busy week, or while entertaining in summer.

Ingredient notes:

- Lamb: Lamb steaks are perfect for this recipe. You can also use beef steak, such as sirloin or scotch fillet if you prefer.
- Tzatziki: Use store bought or make your own homemade Tzatziki. You can swap this for hummus of you prefer.
- Flatbreads: Use storebought flatbreads or if you have the time, why not try making your own Flatbreads too?

Step by step instructions:
Add the cauliflower florets to a large bowl. Drizzle over the olive oil, then sprinkle in the ground cumin, chicken salt and cornflour. Toss well to coat. Place the cauliflower into an air fryer and cook at 180°C for 15-20 minutes, shaking halfway through. Spray with a little extra oil if needed.


To make the lamb: In a medium bowl, mix together the olive oil, ground cumin, ground coriander and salt. Add the lamb steaks and coat in the spice mix.


Heat a large frying pan over a medium heat. Cook the lamb for 5 minutes on each side or until cooked to your liking. Set aside to rest.


Toast the flatbreads or pita pockets and cut into triangles. Spread with garlic butter while warm.

To assemble the bowls, add the air-fried cauliflower, sliced lamb, cucumber and cherry tomatoes. Then add the garlic flatbread on the side and finish with a dollop of tzatziki.

Recipe FAQs:
Roast the cauliflower in the oven instead. Spread on a lined tray and bake at 200°C fan bake for 30 minutes, tossing halfway through until golden and tender.
Extras like feta, olives or pickled red onion would work well in this dish.
Storage:
Store any leftovers in airtight containers in the fridge for up to three days. Enjoy your leftovers hot or cold!

Ingredients
Air-Fried Cauliflower
- ½ head of cauliflower, cut into florets
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp chicken salt (or plain salt)
- 2 tsp cornflour
Grilled Lamb
- 600g boneless lamb leg steaks
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
To Serve
- 2 flatbreads or 4 pita pockets, toasted
- 2 tsp garlic butter
- ½ cucumber, thinly sliced
- 100g cherry tomatoes, quartered
- 4 Tbsp store-bought tzatziki
