Lamb koftas cooked in the air fryer with crispy potato chips, then wrapped in a homemade flatbread filled with tzatziki and salad veggies.

These Lamb Koftas with Homemade Flatbreads were inspired by gyros on my travels to Greece. They are super simple to make and taste delicious, another excellent fakeaway meal. I created these as part of our super-popular $20 Dinners series, in an effort to show people how they can continue to feed their families for less. This recipe is made using an air fryer, but if you don't have one, you can cook the lamb and chips in the oven at 200°C instead.
Ingredient notes:

- Lamb Koftas : I bought these from my local supermarket. If you wanted to, you could make your own with lamb mince.
- Flatbreads: The flatbreads are made from three simple ingredients; Greek yoghurt, plain flour and baking powder. Once you've made these once you won't want to buy store bought ever again!
- Potato: The potato gets cut into strips to make chips. Use a roasting potato for best results.

Step by step instructions:
Add the lamb koftas to the air fryer and cook at 180°C for 15 minutes until cooked through. At the same time, slice the potato into chips. Spray with oil, sprinkle over paprika and salt, then add to the air fryer with the lamb and cook for 20 minutes until golden and crisp.


While the lamb and chips are cooking, make the flatbreads. Add the yoghurt, flour and baking powder to a large bowl. Season with salt and pepper and mix to combine.


Tip the dough onto a well-floured bench and knead a few times until smooth. Cut into 4 pieces.


Roll each piece out into a circle using a floured rolling pin.


Cook each flatbread in a lightly oiled frying pan for a few minutes on each side until golden. Transfer to a tray in a low oven to keep warm.


To make the tzatziki, add the Greek yoghurt, lemon juice, garlic and grated cucumber to a small bowl and mix well.


Thinly slice the red onion, tomato and cucumber. Once the lamb is cooked, cut each kofta in half.


To assemble, spread a generous dollop of tzatziki over each flatbread. Top with red onion, tomato, cucumber, hot chips and lamb.


Wrap each one in foil to keep it together and serve while hot.

Recipe FAQs:
Absolutely. If you have flat breads to use up, or you're short on time, feel free to use pre made flatbreads. You want something thick and chewy to hold all the ingredients.

It's very hard to find gluten free flatbreads in New Zealand! There are gluten free pita pockets available which would work. Or if you have a good recipe, you can make your own gluten free flatbreads.
Storage:
Store any leftover flatbreads in an airtight container in the pantry for up to 2 days, reheat before using. Store any leftover tzatziki, lamb and vegetables in airtight containers in the fridge for up to 3 days. Reheat the lamb and potato in the air fyer until warmed through.
Top tips:
- Swap lamb koftas for chicken or beef if preferred.
- You can cook everything in the oven at 200°C fan bake if needed.

Lamb koftas cooked in the air fryer with crispy potato chips, then wrapped in a homemade flatbread filled with tzatziki and salad veggies.
Ingredients
Flatbreads
- 250g plain Greek yoghurt
- 250g plain flour
- 1 ½ tsp baking powder
Filling
- 300g lamb kofta grill skewers
- 1 large potato
- ¼ tsp paprika
- 1 red onion, thinly sliced
- 1 tomato, thinly sliced
- ¼ cucumber, thinly sliced
Tzatziki
- 150g plain Greek yoghurt
- Juice of ½ small lemon, 1 tbsp
- 1 clove garlic, crushed
- ¼ cucumber, grated with excess liquid squeezed out

- Add the lamb koftas to the air fryer and cook at 180°C for 15 minutes until cooked through.
