A simple recipe for delicious loaded fries, made with frozen chips, bacon, sour cream, milk, flour, cheese and chives. Ready in 40 minutes, this is an easy side dish for any night of the week.
Don't get me wrong, I love a hot chippy with tomato sauce. But this recipe really takes the humble frozen fry to the next level. Once the chips are cooking in the oven you can sit back and relax until they are almost ready. Set a timer, and when there is about 10 minutes to go, get onto making the cheesy bacon sauce.

Ingredient notes:
- Frozen Chips: You can use any frozen chips you like (crinkle cut, shoestring or wedges would work great too). I love the big, flat steakhouse chips.
- Bacon: I like using streaky bacon as the streaks of fat render down nicely in the pan.
- Cheese: We usually have Tasty in our fridge but use whichever cheese you prefer.

Step by step instructions:
Cook the oven chips according to the packet instructions. While the chips are cooking, prepare the sauce. In a large frying pan, cook the bacon for 10-15 minutes until the fat has rendered and the bacon is golden. Remove from the pan and set aside.
In the same pan, add the butter and melt together with the bacon grease. Sprinkle over the flour and cook off for 1 minute.
Pour the milk into the pan, stirring as you go. Once the mixture starts to thicken, take the pan off the heat and add the cheese. Season to taste with salt and pepper, mix to combine.
Finely chop the cooled bacon pieces. Add half of the bacon back into the cheese sauce. Remove the hot chips from the oven. Place in a serving dish, or leave in the tray. Pour over the cheese and bacon sauce. Drizzle over the sour cream then top with remaining chopped bacon and chives.

These are so versatile, and you could use whatever you have in the fridge. They would be so delicious with strips of beef, BBQ sauce and caramelised onions. It's very much up to your tastes!
Yes! Homemade fries would be great, especially as wedges. The process will take a little longer of course. Which is why for a quick meal, I would use frozen fries that are ready to go.
Storage:
It's best to eat these hot, straight from the oven! Once the toppings are on there, it would make it hard to reheat. But if there are leftovers, you could store them in an airtight container in the fridge for the next day. Reheat in the microwave or air fryer until piping hot.

- 1 Tbsp butter
- 1 Tbsp flour
- 1 cup milk
To Serve
- 1 cup grated cheese
- ½ cup sour cream
- 2 Tbsp fresh chives, chopped
