Ingredient notes:

- Tomatoes: Choose large, ripe tomatoes that are firm but juicy. Even slices will help create a neat, defined wreath shape.
- Mozzarella: Soft, creamy mozzarella balances the acidity of the tomatoes. Pat it dry slightly before slicing to prevent excess moisture on the platter.
- Balsamic glaze: With its sweet and acidic flavours, this glaze really ties everything together. If you love the flavour of this condiment but not the price tag, why not make your own? Check out our easy recipe for homemade balsamic glaze in this recipe for Beetroot Feta and Walnut Salad.

Step by step instructions:
Thinly slice the tomato and mozzarella into even rounds. Arrange them on a large round platter in the shape of a wreath, alternating between the tomato and mozzarella slices.

Tuck the fresh basil leaves in between each layer, letting some of the leaves stick out for a wreath effect.

Sprinkle with sea salt, season with pepper, then drizzle over the olive oil and balsamic glaze.

Scatter the chopped pistachios on top for extra crunch and colour. Serve immediately or keep chilled until ready to serve.

Recipe FAQs:
Yes, you can assemble the wreath a few hours ahead and refrigerate it. Add the olive oil, balsamic glaze and pistachios just before serving.
Toasted pine nuts, a sprinkle of chilli flakes or a drizzle of pesto would all work beautifully. Or to keep it more traditional, keep it simple with just tomatoes, mozzarella, basil, olive oil and seasoning.
Absolutely. Halve them and arrange cut-side up for a slightly different but equally festive look.

Storage:
This dish is best enjoyed fresh on the day it's made. Store any leftovers in an airtight container in the fridge for up to 2 days. The tomatoes may release extra juice over time, so drain gently before serving again.
Top tips:
- Use a large round platter to help guide your wreath shape. Start with a rough circle, then adjust and tighten the layers once complete.
- Pat the mozzarella dry with paper towels to avoid excess liquid pooling on the plate.
