These Ham and Cheese Puff Pastry Croissants are such a fun and easy lunchbox idea. They come together so fast and look super impressive with hardly any effort. I made a simple kid-friendly version plus an adult version with tomato relish and sesame seeds. The whole team loved them! Ingredient notes:

- Puff Pastry: Just your bog-standard frozen puff pastry sheets available from all good supermarkets.
- Cheese: You can either use pre-sliced mozzarella cheese like I have here. Or you can use your favourite block cheese, either cut into slices or grated.
- Ham: Again, you can use either use pre-packaged ham slices, or deli sliced ham.

Step by step instructions:
Preheat the oven to 180°C fan bake. Place one sheet of puff pastry onto a board. Top with cheese slices and sliced ham. If making the adult version, spread over a thin layer of tomato relish first.


Place another sheet of puff pastry on top and gently press together. Cut the pastry into long triangles.


Starting from the thick end, roll each triangle up into a croissant shape.


Place onto a lined baking tray. Brush with the whisked egg and sprinkle with sesame seeds if using.


Bake for 20-25 minutes until puffed up, golden and cooked through.
