Next-level cheeseburgers made from a smoky, tangy, Angel Bay beef patty topped with cheddar cheese, crispy bacon, caramelised onions and BBQ mayo in a brioche bun!
When it comes to a quick and easy dinner that I know our whole family will enjoy, burgers are right up there! Everyone can pick and choose what they put in and making them at home is so much more affordable than getting takeaways.
My latest burger recipe for BBQ Bacon Cheeseburgers is sensational. I partnered with Angel Bay and used their Smoky, Tangy and Cheesy Beef Patties. Made from delicious NZ beef, gherkins, cheese, mustard, caramelised onion and smoke powder, these patties are big on flavour! Treat yourself to something a little different for your next fakeaways night!

Ingredient notes:
- Meat patties: For this recipe I used these tasty Smoky, Tangy & Cheesy Beef Patties from Angel Bay. The patties are full of flavour and go so well with the BBQ sauce, bacon and caramelised onions.
- Bacon: My preference is streaky bacon in burgers because the fat renders down to help create really crispy bacon. Any type of bacon would work though.
- Buns: There's something extra delicious about a soft brioche bun. If you prefer a plain or sesame bun, they can absolutely be used instead.

Step by step instructions:
In a small bowl, mix together the mayonnaise and BBQ sauce. Set aside. Place a large non-stick frying pan over a gentle heat. Add the bacon and cook until crispy. Set aside cooked bacon and reserve pan for patties.
While the bacon is cooking, place a second non-stick frying pan over a gentle heat. Add 1 tablespoon of the oil and the onions and gently sauté for 10 minutes until soft. Add the brown sugar and balsamic vinegar, cook for 10 more minutes until caramelised and sticky.
While the onions are cooking, reheat the bacon pan to a medium high heat. Add the remaining oil then the burger patties. Cook for 5 minutes on each side until browned and the patties are cooked through.
To assemble: Slice the brioche buns in half and spread the BBQ mayonnaise over the base. Top with the cooked burger patties, cheese, crispy bacon and caramelised onions. Add a little more BBQ mayo to the top bun then place on top. Repeat for all the burgers and serve immediately.

Yes! You could easily cook the meat on the BBQ and even give the buns a light toast before assembling.
Yes! They are certified gluten free. Simply replace the brioche buns with gluten free buns to make this meal gluten free. *As always, ensure you read the labels on your sauces to ensure they are gluten free.
Storage:
These burgers are best eaten at the time they are made. If you have leftovers, store them in separate containers in the fridge, then reheat and assemble with a fresh bun the following day.

BBQ Bacon Cheeseburger
Cheeseburgers made with a tangy BBQ mayonnaise, crispy bacon, smoky beef meat patties, cheddar cheese and brioche buns.
Ingredients
- ¼ cup mayonnaise
- 2 Tbsp BBQ sauce
- 180g streaky bacon
- 2 Tbsp olive oil
- 1 onion, sliced
- 1 tsp brown sugar
- 1 tsp balsamic vinegar
- 4 slices cheddar cheese
- 4 Angel Bay, Smoky Tangy and Cheesy Meat Patties, thawed
- 4 brioche burger buns
