Is it dessert? Is it breakfast? Spoiler alert! These Banana and Raspberry Baked Oats are whatever you want them to be! Get ahead and meal prep your breakfast for the week. Cut into smaller slices for school lunches or enjoy warm from the oven for dessert! This easy recipe can be made year-round with frozen raspberries. Or use fresh raspberries in the summer when they're plentiful and affordable.

- Bananas: Add natural sweetness, moisture, and a soft texture to the oats
- Oats: The base of the dish, providing fibre and keeping you full.
- Raspberries: These give a lovely burst of fresh flavour. I use frozen berries so I can make this year round.

Step by step instructions:
Preheat the oven to 180°C fan bake. Grease a medium sized baking dish with butter or oil. In a large bowl, mash the bananas then add the eggs and milk and mix together.


Add the oats, baking powder, cinnamon and brown sugar then stir to combine. Fold through the frozen raspberries and chocolate chips.


Pour the mixture into the prepared dish and spread to the edges. Sprinkle extra chocolate chips over the top.


Bake for 35 minutes, until golden and set in the centre. Serve warm topped with a dollop of vanilla yoghurt and maple syrup.

Yes! You can substitute the milk with almond, soy, oat, or coconut milk. Serve with dairy-free yoghurt if needed.
Absolutely. Fresh raspberries work just as well, but they may break down a little more during baking.
Yes, you can mix everything together and keep it covered in the fridge overnight, then bake it fresh in the morning.
Storage:
Fridge: Store in an airtight container for 3-4 days.
Freezer: Portion into slices/squares, wrap well, and freeze for up to 3 months. Defrost overnight in the fridge or reheat from frozen in the microwave/oven.
Top tips:
Feel free to substitute the raspberries and chocolate for your favourite fruit and nuts if you prefer.

- 2 eggs
- 1 ½ cups milk
- 2 cups creamy rolled oats
- 2 tsp baking powder
- 1 tsp cinnamon
- ⅓ cup brown sugar
- 1 cup frozen raspberries
- ¼ cup chocolate chips (plus extra for topping)
To serve:
- Vanilla yoghurt
- Maple syrup

What are creamy rolled oats as opposed to ordinary rolled oats, please?

Some brands offer a creamy version of their rolled oats. Have a look next time you're in the supermarket. Regular oats work too.

I made this the other day and the batter was exceptionally runny, like slightly thickened milk. I ended up sifting though some flour through as I was afraid it wouldn't set. Is this the correct consistency, or am I doing something wrong? I would like to avoid adding flour if possible even though it still came out delicious. Thanks

Yes, as per the pictures, the mixture is very wet/runny. But it binds when it bakes.
