Ingredient notes:

- Frozen strawberries: Convenient and available year-round, they create a rich, jammy filling.

Step by step instructions:
Preheat the oven to 190°C fan bake. Add the strawberries, sugar, cinnamon and vanilla essence to an ovenproof cast iron baking dish. Cook stirring on the stovetop until bubbling and the sugar has just dissolved.

Sprinkle over the flour and mix to combine. Set aside while you make the topping. To make the topping, melt the butter in a glass bowl in the microwave. Then add the flour, sugar and baking powder. Pour in the milk and fold together until combined.

Using a spoon, drop spoonfuls of dough evenly over the strawberries. Add a sprinkle of white sugar over the top of the dough pieces. Bake uncovered for 25 minutes until the crust is golden and the filling is bubbling. Leave to cool for 5 minutes before serving.

Serve warm with vanilla ice cream or cream.

Recipe FAQs:
Of course! You can use raspberries, blueberries or mixed berries.
Yes, simply swap the flour and baking powder for gluten free options of the same amount.
You can make the filling ahead, but add the topping just before baking for the best texture.
Storage:
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warmed through. Best enjoyed fresh, but still delicious the next day.
Top tips:
- Thawing the strawberries first helps them cook down faster and evenly.
- If your fruit is very juicy, the teaspoon of flour helps thicken the filling nicely.
- Don't worry about perfectly spreading the topping - rustic spoonfuls give that classic cobbler look.
- A sprinkle of sugar on top creates a lovely crisp finish.
