Oaty Choc Chunk Cookie Bars made from butter, brown sugar, caster sugar, egg, flour, rolled oats and chocolate cut into chunks. These are excellent for school lunch boxes.

Not quite a cookie, not quite a muesli bar, these Oaty Chocolate Chunk Cookie Bars are the best of both worlds. The oats give the bars a chewy texture which is a lovely contrast to the hard chunks of delicious chocolate. Perfect for school lunches, shared morning teas or for visitors, everyone loves these bars. Ingredient notes:

- Oats: The oats give the cookies bars a chewy texture while also helping to bind everything together.
- Chocolate: I used a 50% dark chocolate as I like the way it balances out the sweetness of the cookie dough. You can use milk chocolate, white chocolate or super dark chocolate if you prefer.
- Sugar: Both types of sugar are important here. The brown sugar gives the dough a rich caramel flavour and a chewy texture. While the caster sugar creates a lovely crisp topping.

Step by step instructions:
Preheat the oven to 170°C fan bake. Cream the butter and sugar with an electric or hand mixer until just combined. Add the egg, egg yolk and vanilla then mix again until the ingredients are just combined.


Fold the flour and baking soda into the wet ingredients until a soft dough forms, followed by the oats and chocolate.


Press the dough into a lined slice tin and bake for 20-25 minutes, then leave to cool in the tin.


Turn out onto a cooling rack, then once completely cool, cut into 16 bar shaped pieces. Drizzle over melted chocolate and sprinkle sea salt on top if desired.

Top tips:
- Don't overmix the dough once the flour is added or the slice can become tough instead of soft and chewy.
- For the best texture, slightly underbake the slice. The centre should still look just set when you remove it from the oven, as it will continue to firm up while cooling.
- Allow the slice to cool completely before cutting for cleaner edges and neater bars.
- Sprinkle over flaky sea salt before baking for a delicious sweet and salty finish.
