Fun and festive, this amazing White Christmas Marshmallow Rice Bubble Slice is made from marshmallows, butter, vanilla essence and rice bubbles! Top with white chocolate and your favourite Christmas sweets.
White Christmas is a popular slice made with rice bubbles, white chocolate and dried fruit. While many people adore this version, it's not a favourite with a lot of kids. So I decided to make my own version that the whole family can enjoy; White Christmas Marshmallow Rice Bubble Slice! This recipe is so easy to prepare and decorate. Young kids will love helping out with the fun toppings.

Ingredient notes:
- Marshmallows: Yes, I separated two bags of pink and white marshmallows so that I could use all the white ones! You could use both colour together if you prefer, you'll just end up with more of a 'Pink Christmas' than a 'White Christmas'!
- Rice bubbles: This recipe calls for plain rice bubbles. I've also made it with gluten free rice bubbles in the past!
- Toppings: Let your imagination run wild with Christmas themed sprinkles, chocolate and candy. Or, leave it plain if you prefer.

Step by step instructions:
Line a 17 x 27cm baking tray with baking paper and set aside. Place the butter in a large saucepan over a low heat and melt. Add the marshmallows to the melted butter. Mix until completely melted and combined.
Add the vanilla, stir to combine then remove from the heat. Add the rice bubbles to the saucepan and work quickly to mix everything together.
Tip the mixture into the lined baking tray. Spread it out to the edges and push down with the back of a dessert spoon.
Drizzle over the melted chocolate, then scatter the sprinkles and M&Ms over the top. Place in the fridge to chill for 2 hours or overnight.
Slice into squares then place in an airtight container.
Recipe FAQs:
This helps to keep the rice bubble slice white in colour! I have another recipe for Marshmallow Rice Bubble Slice that uses pink and white marshmallows together and it is very pink! But as always, feel free to use both colours if you prefer.
You could also decorate your slice with chocolate drops, crushed candy canes or other Christmas candy.
Storage:
Store your White Christmas Marshmallow Rice Bubble Slice in an airtight container either in the pantry, or the fridge depending on how warm the weather is!
This delicious slice can also be frozen. Once set, cut into pieces then place in airtight bags or containers in the freezer for up to three months.
Top tips:
- Other toppings to use could include chocolate chips or mini M&Ms.
- You could leave the topping plain if you prefer.

Ingredients

- 180g white marshmallows
- 1 tsp vanilla essence
- 4 cups rice bubbles
Topping
- 75g white chocolate melted
- Christmas Sprinkles & M&Ms
Instructions
