Delicious quesadillas made from Mexican beef mince and beans in a toasted tortilla served with guacamole and corn salsa. A fun meal that the whole family can enjoy.
Beef Quesadillas are such an easy and fun meal to make for your friends and family. I love how colourful and festive this meal looks.
The best hack for making quesadillas is to fold the tortilla in half and pan fry each side. This way you have a seal on one edge which helps when eating! If you enjoy this meal, you might also like my layered Easy Chicken Tortillas!

Ingredient notes:
- Beef mince: This is my favourite mince to use in this recipe. Feel free to swap it for chicken or pork mince if you prefer.
- Chilli beans: I used mild chilli beans because I know my kids will eat them! There are some great spicy options around too.
- Cheese: I used grated Colby cheese but as always, use what you have in the fridge.

Step by step instructions:
Place all of the corn salsa ingredients together in a bowl. Season well with salt and pepper, mix to combine then set aside.
In a separate bowl, mash the avocado, then add the garlic and lime juice. Season well with salt and pepper, mix to combine then set aside.
Heat olive oil in a large frying pan over a medium heat. Add the onion and sauté for a few minutes, then add the garlic and mince. Use a spatula to break the mince up and fry until the mince has browned.
Add the spices and stir through the mince. Mix in the chilli beans then simmer on low for a few minutes. Season to taste with salt and pepper.
Place the mince on half of a tortilla then sprinkle with cheese. Fold the other half of the tortilla on top. Cook 2 folded tortillas at a time in a large frying pan over a medium heat for a few minutes on each side. Repeat with remaining tortillas.
Chop the quesadillas in half so that you have 8 pieces and serve with the corn salsa, guacamole, tomato salsa, lime wedges and fresh coriander.

Yes it could. Simply swap the regular tortillas for a gluten free alternative. And as always, ensure you read the labels on any processed foods to ensure they meet your dietary requirements.
No. I used mild chilli beans in the beef mix so this meal would be suitable for the whole family. If you prefer more spice, feel free to use hot chilli beans, or add some hot sauce to your beef mix or on top of your cooked quesadillas.
Storage:
If you want to get ahead, the beef mix could be made in advance and then refrigerated until you're ready to make the quesadillas.
Store any leftover beef mix in an airtight container in the fridge for up to three days. Assemble more fresh quesadillas as you require them.

Tasty quesadillas made from toasted tortillas filled with Mexican-style mince then topped with homemade corn salsa and guacamole.
Ingredients
Corn salsa
- 420g can of corn kernels, drained
- 4 small tomatoes, chopped
- Handful of coriander, chopped
- 1 tsp lime juice
Guacamole
- 1 large avocado
- 1 small clove garlic, crushed
- 1 tsp lime juice
- Salt and pepper
Mince mixture
- 1 tsp olive oil
