A refreshing and flavoursome spiced rum apple cider made from gold rum, maple syrup, cinnamon, apple cider and ice. Serve with sliced apples and a cinnamon stick to garnish.

Over Christmas 2024, we tried our hand at summer cocktails. We could not have anticipated just how popular they would be! Amongst the offering were a Cranberry Gin Fizz, a Ferroro Rocher Frappé and a Rose Sangria Spritz to name but a few.
This recipe for a Spice Apple Cider Rum is another absolute winner. Golden rum mixed with ice, maple syrup and ground cinnamon, then topped up with fizzy apple cider.
Ingredient notes:
- Rum: I used a gold rum for this recipe, but feel free to substitute for any rum you have to hand.
- Maple Syrup: If possible, try to use authentic maple syrup as opposed to maple flavoured syrup which is thicker and won't mix as well.
- Cinnamon: The ground cinnamon in the cocktail will provide plenty of spiced goodness. The cinnamon stick is an optional garnish - more for aesthetics than flavour.

Step by step instructions:
Add ice, rum, maple syrup and cinnamon to a cocktail shaker.
Shake well.
Strain into two glasses filled with ice and top with apple cider.
Stir gently and garnish with apple slices and a cinnamon stick.

Ingredients
- 1 cup ice
- 60ml gold rum
- 1 Tbsp maple syrup
- ¼ tsp cinnamon
- 300ml apple cider
- Ice, apple slices and cinnamon sticks (for garnish)
Instructions
- Add ice, rum, maple syrup, and cinnamon to a cocktail shaker. Shake well.
- Strain into two glasses filled with ice and top with apple cider.
- Stir gently and garnish with apple slices and a cinnamon stick.
Notes
Garnish is optional but fun!
