A fresh, seasonal, summer salad made from chopped watermelon, cucumber, red onion, fresh mint and creamy feta in a tangy dressing. This recipe is surprisingly delicious.

You may have had strawberries with balsamic vinegar before, but have you had watermelon with feta? I know, it sounds odd, but trust me when I say this Watermelon, Feta and Mint Salad is absolutely sensational. The sweet watermelon pairs so well with the creamy and salty feta, the crunchy, sharp red onion and the fresh mint. Coated in a lime and olive oil dressing, this salad delivers on flavour. Ingredient notes:

- Watermelon: This is a wonderful recipe to make in summer when watermelons are plentiful and affordable. Delicious on their own, this salad takes them to the next level! Watermelons season runs from December to April in New Zealand.
- Feta: I used this basil pesto feta as it was in my fridge, and it was delicious. You could use plain cows' milk feta or goats' milk feta if you prefer.
- Dressing: The homemade dressing is a simple combination of olive oil, lime juice, honey, salt and pepper. You can also use lemon juice if you don't have access to limes.

Step by step instructions:
Add the watermelon, cucumber, red onion, feta and mint to a large bowl. Whisk together the olive oil, lime juice, honey, salt and pepper to make the dressing.

Pour the dressing over the salad ingredients and toss to combine. Add to a serving platter and season with salt and pepper, then garnish with extra mint leaves.

Absolutely not! It looks like it would be weird, but the sweetness of the watermelon goes so well with the tangy dressing, sharp onion and salty feta. Honestly, everyone who tries it is pleasantly surprised!
As watermelon is so...watery, it's best to assemble this salad right before eating. It will keep for another day in an airtight container in the fridge, but the watermelon will release more water.

Storage:
To get ahead, you can chop up all the components and store them separately in the fridge. Assemble just before serving to avoid everything getting too soggy. Needless to say, this salad is not suitable for freezing.

- ¼ watermelon, cut into bite sized pieces
- 1 cucumber, thinly sliced
