From a weekend brunch to weekday lunch, a shared dinner or as a side to a main, these Tomato, Pesto and Ham Flatbreads are perfect for any occasion! They are so easy too. Simply buy pre-made flatbreads, choose your favourite toppings, pop them on and then bake them in the oven till they are crispy and warm.

Ingredient notes:
- Flatbreads: I just used store-bought flatbreads, but you could certainly make your own.
- Pesto: I love a basil pesto, but a tomato pesto would be tasty too. They are easy to grab from the chiller in the supermarket or why not whip up one at home?
- Cream Cheese: The cream cheese is so delicious when it is all melted into the crispy warm flatbread.

Step by step instructions:
Preheat the oven to 200°C fan grill. Spread a layer of cream cheese over each flatbread, followed by a layer of basil pesto. Top with the grated cheese, tomatoes, ham and olives.
Grill for 10 minutes until the cheese is golden and melted. Serve immediately with a garnish of fresh basil.
Hint: Some other toppings you might like would be salami, brie, olives, capsicum, mushrooms, sun dried tomatoes and pinenuts.
Recipe FAQs:
It's kind of a cross between a pita and a naan. Flatbread is basically unleavened bread, which is made without yeast.
Some ideas could be blue cheese with caramelised onion, pear and aged balsamic vinegar. Or how about pizza sauce, mozzarella cheese, onion and red pepper? A breakfast one would also be tasty, using scrambled eggs, tomato, spinach and cheese of your choice.
Storage:
These are best eaten fresh from the oven, but you could certainly pop any leftovers in the fridge to eat the next day.

- 200g grated cheese, 2 cups
- 4 tomatoes, chopped
- 100g ham, chopped
- 4 tablespoons black olives, optional
- Fresh basil, to garnish
Instructions
