An easy and tasty tray bake made from a homemade mince bolognese topped with hash brown bites and grated cheese, then cooked until golden in the oven.
Hash browns and mince; two popular ingredients that most kids can get on board with. If you're looking for an easy meal to prepare, that you know will get eaten by the whole family, then this Hash Brown Bolognese Bake is the one for you. If you really want to get ahead you could double the recipe and pop one in the freezer. See the 'storage' section below for freezing tips.

Ingredient notes:
- Mince: I used low fat beef mince in this meal. Feel free to use lamb, pork, chicken or venison mince if you prefer.
- Hash bites: I love how these hash bites line up in the tray! But if you prefer you could also use regular hash browns, potato pom poms or even mashed potatoes.
- Pasta sauce: You can use any type of store-bought pasta sauce in this recipe or even make your own.

Step by step instructions:
Preheat the oven to 200°C fan bake. Heat a large frying pan over medium heat. Add the onion and carrot and sauté for 5-10 minutes until soft.
Add the mince and cook until browned all over. Add the garlic and tomato paste, stirring to combine. Cook for a few minutes more. Pour in the pasta sauce and stir everything together. Season to taste with salt and pepper.
Transfer the cooked mince mixture into a baking dish. Top with the hash brown bites and grated cheese.
Bake for 25-30 minutes until the hash browns are crispy and the cheese on top is melted and golden.
Serve immediately with a side salad or steamed vegetables.

Absolutely! You can make the Bolognese sauce ahead of time and refrigerate it for up to 3 days. It will actually taste even better after the flavors have had time to meld. Just reheat it before assembling the bake.
Storage:
Store any leftover bolognese bake in an airtight container in the fridge for up to three days. Reheat in the oven or microwave until piping hot.
This meal can also be frozen. Allow the mince mixture to cool completely before quickly adding the frozen hash brown bites and cheese, then getting them back in the freezer before they have a chance to defrost. Cover with clingfilm and keep in the freezer for up to three months. Allow to defrost before heating in the oven.
Top tips:
If you can't get your hands on hash brown bites, you could also use potato pom poms or even larger hash browns on top.

- 425g can tomato pasta sauce
- 700g hash brown bites, thawed
- 100g cheese, grated
