Stop press. These Classic Crêpes are everything you remember from childhood, or that amazing food truck from that market you went to once. Seriously though, these crêpes are light and thin with just a hint of crispiness on the edge. They can be topped with a simple lemon and sugar combination, cream and chocolate sauce or the classic Nutella and banana. Savoury lovers don't despair - these also taste amazing with ham and cheese or any of your favourite savoury fillings. These would be a wonderful addition to a Christmas day breakfast or brunch.

Ingredient notes:
- Flour: This recipe calls for plain white flour. There is no rising agent in this recipe as you want the crêpes to be thin and flat.
- Milk: You can use either cow's milk or a milk alternative to make these crêpes. The higher the fat content, the more tender the crêpes will be.
- Eggs: I used standard size 7 eggs, at room temperature.

Step by step instructions:
In a large bowl, melt the butter in the microwave for 30 seconds. Add the milk and microwave for another 30 seconds. Whisk together, then add the eggs and whisk until combined. Sift in the flour and add the salt.
Whisk until the batter is smooth and lump-free. Heat a non-stick frying pan over medium heat and lightly grease with butter. Pour ⅓ cup of batter into the pan for each crêpe, swirling to form a thin layer.
Cook for 1-2 minutes on each side until the edges lift, then flip. Slide the cooked crêpes onto a plate and repeat with the remaining batter, adding butter as needed.
Serve with whipped cream, Nutella or chocolate sauce or berries.
Recipe FAQs:
I wouldn't recommend adapting this recipe by substituting plain flour for gluten free flour. Most 'everyday' gluten free flour blends have a high xantham gum content. This will make the crêpes rubbery. You'd be better off finding a recipe with specific gluten free flours like tapioca starch, potato starch etc.
Cream, berries, chocolate sauce, maple syrup, lemon and sugar, Nutella and bananas are all excellent sweet toppings! Savoury crêpes can be filled with cheese, ham, mushrooms, smoked salmon and cream cheese.
Storage:
Crêpes are best served immediately on the day they are made. If you have any leftovers, you could store them in an airtight container in the pantry until the next day.
