French toast made from sliced French bread dipped in an egg and milk mixture, pan fried then served with bacon, banana and maple syrup. A wonderful homemade brunch option.

French Toast with Bacon and Banana is one of my favourite items on a brunch menu. I find it almost impossible to go past. Although it involves a few steps, it's pretty straightforward to make at home. Simply slice your bread, dip it in your egg mixture then pan-fry until golden. I like to serve mine with grilled banana and bacon.

Ingredient notes:
- Bread: Stale bread works really well for this as it holds together when you’re cooking it. And it uses up old bread that might otherwise go to waste!
- Banana: Slightly ripe bananas are ideal for frying. If they're too soft (overripe), they may fall apart in the pan.
- Bacon: Streaky bacon is my favourite kind. You could also use middle bacon though.

Step by step instructions:
Preheat the oven to fan grill. Line a tray with baking paper then lay the bacon out on top. Grill the bacon in the oven until golden. Slice the French stick diagonally into approximately 2cm thick pieces.
In a medium bowl whisk eggs and milk together until well combined. Pour the egg mixture into a flat bottom dish, ready for coating the bread.
Place a large frying pan on a medium heat, then add a little butter. Dip a few slices of bread into the egg mixture ensuring they are well coated, then place them into the hot pan.
Fry each side for 3-4 minutes until golden brown. Ensure there are no soggy bits of raw egg mixture before removing from the pan. Repeat with remaining bread and egg mixture.
Place on a warm plate and cover with a tea towel to keep warm or in the oven on a low temp.
Slice the banana in half long ways. Add a little butter to the pan and fry till golden brown - a minute or 2 on each side.
Plate up your French toast with bacon, and fried banana then drizzle with maple syrup to serve.

Yes, you can use brioche, sourdough, or sandwich bread. Just make sure the slices are thick enough to hold their shape when soaked in the egg mixture.
It should be golden brown on both sides and not feel soggy in the center. If you're unsure, cut one piece open—there should be no runny egg.
Yes. Just swap the French stick for your favourite gluten-free bread.
Storage:
French toast is best served immediately after it is cooked. It is not suitable for freezing.
Top tips:
You’ll need to fry the french bread a little longer than regular sliced bread. It takes longer for the heat to get to the middle of the thicker bread and cook the egg mix.
