These Beef Crunch Wraps are big on two things - flavour and crunch! The beef mince is flavoured with the classic Mexican combo of smoked paprika, ground cumin and garlic. This is then topped with your favourite, crunchy corn chips, fresh salad ingredients and cheese. The wraps are folded up into individual parcels, then pan-fried until golden on the outside and the cheese is melty on the inside.

Ingredient notes:
- Tortillas: You'll need two sizes of tortillas to make these wraps; one larger tortilla on the bottom to wrap around all the fillings, and a smaller one on top to seal the parcel!
- Mince: Beef mince is a classic choice for this meal. By all means, feel free to use chicken, pork, lamb or venison mince if you prefer.
- Corn chips: Any type of corn chips will work in this recipe.

Step by step instructions:
Heat olive oil in a large pan over medium heat, then add the diced onion and sauté until soft. About 5 minutes. Add the beef mince and cook until browned, breaking it up with a spoon. Sprinkle over the garlic, paprika, cumin, salt, and tomato paste. Cook for 2 minutes, then pour in the crushed tomatoes. Cook, stirring for 5 minutes.
To assemble: Lay a large tortilla flat. Spread a tablespoon of sour cream in the centre then top with a portion of the beef mixture. Add a handful of corn chips for extra crunch.
Add a layer of chopped lettuce, diced tomatoes and grated cheese. Place a small tortilla on top, then fold the edges of the large tortilla up and over the small tortilla to create a sealed wrap.
Heat a large frying pan over medium heat. Toast each wrap, sealed side down first, for 2-3 minutes per side until golden and crisp. Serve hot topped with salsa.

Ingredients
Beef mince mixture
- 2 tsp olive oil
- 1 onion, finely diced
- 500g beef mince
- 2 cloves garlic, crushed
- 2 tsp smoked paprika
- 2 tsp ground cumin

- 1 Tbsp tomato paste
- ½ can can crushed tomatoes, 200g
Fillings
- 4 large tortillas
- 4 Tbsp sour cream
- 50g Corn Chips
- ¼ iceberg lettuce, chopped
- 1 tomato, diced
- 200g grated cheese
- 4 small tortillas
To serve
- Salsa
