Ingredient notes:

- Flour: This recipe calls for plain white flour. The rising agent is the yeast.
- Yeast: I use active yeast in this recipe. Whenever you are using yeast, make sure you check the expiry date! For all the time, effort and money, you don't want to be disappointed by the lack of rise caused by expired yeast.
- Milk: The addition of milk makes the loaf softer, gives it a rich flavour and helps to create the golden brown crust.

Step by step instructions:
In the bowl of a stand mixer, combine the milk, warm water, sugar and yeast. Stir together and leave for 10 minutes until frothy. Add the oil, salt and flour. Using the dough hook attachment, mix on low speed for 5 minutes until the dough is smooth and elastic.

Cover the bowl with a clean tea towel and leave to rise in a warm place for 1 hour, or until doubled in size.

Grease two loaf tins. Divide the dough into two equal portions and shape each into a log. Place into the prepared loaf tins.

Spray or lightly oil a piece of cling film and place it over the tins. Leave to rise for another hour, or until the dough has risen above the rim of the tins. Towards the end of the second rise, preheat the oven to 180°C fan bake.

Bake for 30 minutes until golden brown and sounding hollow when tapped on top.

Remove from the oven and leave to cool in the tins for 5 minutes. Brush the tops with the melted butter, then leave to cool in the tins for a further 5 minutes before transferring to a wire rack.

Allow to cool for at least 20 minutes before slicing.

Recipe FAQs:
Yes, simply halve all of the ingredients to make one loaf. The method remains the same.
Absolutely. Once completely cooled, wrap the loaf well or place it in an airtight freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
This can happen if the dough hasn't been kneaded enough, the yeast isn't active, or the dough hasn't had enough time to rise. Be careful not to add too much extra flour when kneading, as this can result in a denser loaf.
Storage:
Store in an airtight container at room temperature for up to 4 days. Freeze sliced bread in a freezer-safe bag for up to 3 months.
Top tips:
Whenever you are using yeast in a recipe, make sure you check the expiry date! For all the time, effort and money that goes into making bread, you don't want to be disappointed by the lack of rise caused by expired yeast.
