An Ice Cream Sundae is a fun dessert any night of the week. For something special, I made my own homemade strawberry sauce then all I needed was ice cream, chocolate, vanilla essence, sugar and lemon juice. Yum!
I loved making the homemade sauce to take these Strawberry Sundaes to the next level. It's really easy and extra delicious. When I was a kid, I thought that you could only eat Ice Cream Sundaes on a Sunday. So, imagine my pleasant surprise when I found out that you can actually eat them any night you like! Here's to Sundaes on a Tuesday, or whichever day takes your fancy.

Ingredient notes:
- Ice Cream: Because I wanted the sauce to really stand out, I kept my ice cream choices on the vanilla side. But you can use any ice cream you like!
- Strawberries: I made my strawberry sauce when strawberries were in season. You could use frozen strawberries if there are no fresh ones in the supermarket, the flavour just won't be as strong and you will probably have to simmer it for longer to help it thicken up.
- Chocolate: I used a crumbled chocolate flake for my sundaes, but you could use your favourite sweet topping instead (or as well).

Step by step instructions:
Add the chopped strawberries, vanilla, sugar and lemon to a small saucepan. Simmer over a low heat for 10 minutes stirring every couple of minutes.
Use a potato masher to crush the strawberries. Cook for another 10 minutes until the sauce has thickened and reduced. Let the sauce cool in the saucepan for 20 minutes. Pour into a jug and place in the fridge to cool completely.
To serve: Scoop the ice cream into 4 sundae cups. Pour the cooled strawberry sauce over the top, then crumble over some chocolate flake and garnish with a fresh strawberry.
Hint: You can use any flavour of ice cream you prefer. Store any extra strawberry sauce in an airtight container in the fridge.
Recipe FAQs:
It's best to use fresh strawberries, but if they aren't in season, you can use frozen. Just be aware that you may have to simmer them for longer, because of their water content. And you also won't get the same flavour.
It depends on what you enjoy, but some ideas are hot fudge, caramel, whipped cream, sprinkles, M&Ms, chopped nuts or marshmallows.
Storage:
Store any extra strawberry sauce in an airtight container in the fridge.

- 4 scoops ice cream
