Ingredient notes:
- Tortillas: It's important to use small tortillas for this meal. Large ones just won't fold up as nicely and will be much harder to eat.
- Mince: I go for mince with a higher fat content when making burgers. The fat that comes out of the mince helps to caramelise the meat in the pan.
- Gherkins: These are such a key component! They make the sauce super flavoursome and are also a critical element of a traditional Big Mac.

Step by step instructions:
In a small bowl, mix together all of the ingredients for the burger sauce, place in the fridge while you make the tacos. Divide the mince into 8 equal portions, then roll each one into a tight ball.
Place a ball of mince on each tortilla and use your hands to press it down firmly until it is thinly covered. Season well with salt and pepper. Heat a dash of oil in a large frying pan over medium heat. Place the tortillas, meat-side down, in the pan 2 at a time.
Press down with a spatula and cook until the meat is browned. Flip over, then add a slice of cheese on top of the browned mince. Cook for another minute until the cheese starts to melt.
Repeat with the remaining tortillas and mince. Keep them warm in the oven while you make the rest. Top each taco with lettuce, gherkins, onion and sesame seeds. Drizzle with the burger sauce then serve immediately.
Recipe FAQs:
