A simple recipe for a tasty and versatile Cheese Sauce. This big batch is perfect for Lasagne, Mac n Cheese, or steamed veggies.

Everyone needs a good Cheese Sauce recipe up their sleeve. My quick and easy recipe for a big batch cheese sauce is super tasty and very versatile.
I make enough for two family sized meals because I like to get ahead. Sometimes I make two lasagnes and freeze one for a later date. Other times I make one lasagne and a quick mac n cheese.
But if you only want to make one meal, you can just halve the ingredients.
I like a cheese sauce full of flavour. Therefore my version uses wholegrain mustard and freshly grated nutmeg. If you or your kids don't like those, leave them out or substitute the wholegrain mustard for mild mustard.
How to make Cheese Sauce:
Place a large saucepan on a low heat and add the butter. Stir until melted then add the flour and combine. Keep stirring for a minute to fry the mixture.
Start adding the milk slowly, stirring well between each addition. Once all the milk has been added, let the sauce simmer until thick.
Take off the heat. Add the mustard, cheese and optional nutmeg. Season well with salt and pepper then stir to combine.
Add your yummy cheese sauce to a lasagne, mac n cheese, cauliflower cheese, fish pie or serve with steamed green vegetables.

If you don't like the look of the mustard grains in your cheese sauce, feel free to use any mild, plain mustard instead.
Yeah it can! You can freeze any remaining sauce in a snap lock bag or airtight container. Or, add in some freshly cooked macaroni and freeze a quick and easy meal for another day.

Big Batch Cheese Sauce
A smooth and creamy cheese sauce flavoured with nutmeg and wholegrain mustard.
Ingredients
- 100g butter
- 100g flour
- 1L milk
- 2 tsp wholegrain mustard
- 2 cups grated cheese, 200g
- ½ tsp freshly grated nutmeg (optional)
- Salt and pepper

Notes
- This recipe makes enough for two family sized lasagnes. You could either half it for one meal, or use the second portion in a quick mac n cheese to put in the freezer for a later date.
- The nutmeg and wholegrain mustard are both optional, but do add lovely flavours. If you don't like the look of whole grain mustard, a mild mustard could be substituted.
